Pita pizzas have always been one of my go-to, fast-and-easy recipes. I usually whip up an Arugula Pita Pizza when I feel a pizza craving coming on or when I’m trying to consume more of those healthy, leafy greens. Arugula on its own or in a salad can sometimes tastes bitter which is why I avoided it in the past. However, on top of melted cheese, arugula gives our pizzas a fresh, summery taste.
Arugula Pita Pizza
Prep: 5-10 minutes
Cook: 8 minutes
Yield: Makes 4 pizzas
4 whole-wheat pita loaves
2 TBSP olive oil
1 clove of garlic, pressed
1 (6.5 ounce) can of tomato sauce
1 tsp dried oregano
1 cup grated low-fat mozzarella cheese
1 small onion, sliced into rings
1 cup fresh arugula
Fresh basil leaves
1) Preheat oven to 400°F.
2) Arrange pitas on a nonstick pan. Drizzle or brush olive oil with pressed garlic on pitas.
3) Spread lightly with tomato sauce and sprinkle with oregano and mozzarella cheese. Add the onions on top.
4) Place in oven and bake for 8 minutes or until the pita bread has achieved desired crispiness.
5) Top pizzas with fresh arugula and basil leaves.
