Lavender Honey Cupcakes

Recently I came across a bottle of dried lavender that I had bought over a year ago and simple forgot about. I think I original bought it because of the amazing smell of the dried lavender and then forgot about in the back of my spice rack. Not many recipes call for lavender but it can make a wonderful addition to baked goods, as demonstrated by these unforgettable cupcakes!

Lavender Honey Cupcakes
Yield: 10-12 cupcakes

For the cupcakes:

1/2 cup (1 stick) unsalted butter, softened
1 cup brown sugar
2 eggs
2 teaspoons vanilla extract
1 1/2 cups whole wheat flour, sifted
1/2 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons dried lavender buds
1 cup almond milk
1) Preheat oven to 350 degrees F. Line muffin tins with cupcake liners.
2) In the bowl of an electric mixer, cream the softened butter and sugar together. Add the eggs one at a time, beating after each egg. Stir in the vanilla.
3) In a separate bowl, stir together the flour, baking powder, and salt. Chop the dried lavender buds into fine, small pieces then stir into the flour mixture.
4) Slowly add the flour mixture to the butter mixture. Stir in the milk. Scoop batter evenly into lined muffin tins.
5) Bake for 18-24 minutes, or until a toothpick can be removed cleanly. Let cupcakes cool in the tray for about 5 minutes, then remove to a wire rack to cool completely.
For the frosting:

1/2 cup (1 stick) unsalted butter, softened
8 ounces low fat cream cheese, softened
2 cups powdered sugar
1 teaspoons vanilla extract
2 tablespoons honey, plus a little extra for drizzle

1) In the large bowl of an electric mixer, beat the butter and cream cheese together. Add the powdered sugar 1 cup at a time, mixing on low, until the frosting is smooth and creamy. Beat in the vanilla extract and honey.
2) Scoop frosting into a piping bag fitted with a 1M tip. Circle the icing onto the cupcakes starting from the outside and working your way in.
Lightly drizzle a little honey on top of the frosting. Enjoy!

  1. Baked these today out of curiosity – I love both cupcakes AND lavender – and they were amazing. I have never used lavender for cooking and this recipe sparked my interest. Highly recommended!
