Here’s a sweet way to start your day!
Yield: 4 servings

4 cups almond or coconut milk
2 cups rolled oats
4 TBSP egg whites
1 large apple, peeled, cored, and diced
1 cup shredded carrots
¼ cup raisins
2 teaspoons ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground ginger
Dash of salt
½ cup chopped walnuts
1 TBSP brown sugar
Dollop of low-fat cream cheese or Greek yogurt
1) Bring almond or coconut milk in a large saucepan, and stir in oats. Reduce heat and simmer oats for 10 minutes or until they are thick.
2) Reduce heat to low. Mix in the egg whites, apple, shredded carrots, raisins, cinnamon, nutmeg, ginger, and salt. Cook on low heat for 5 minutes, stirring occasionally.
3) Remove from heat and mix in chopped walnuts and brown sugar.
4) Garnish with a dollop of low-fat cream cheese or Greek yogurt.
