Vegetarian Lentil “Meatloaf”

Yield: 6 servings
Prep time: 10 minutes
Cook time 45 minutes to 1 hour

Vegetarian Lentil Meatloaf

2 (15 oz.) cans of lentils or about 4 cups
1 egg
¼ cup chopped onion
½ cup whole wheat bread crumbs
¼ cup salsa
1 TBSP ketchup
4 TBSP organic barbeque sauce
½ teaspoon ground black pepper
Dash of salt

1) Preheat the oven to 350°F.
2) Rinse and drain the lentils. Using a food processor or blender, mince the lentils until coarsely ground being careful not to over blend.
3) In a large bowl lentils, egg, onion, bread crumbs, salsa, ketchup, barbeque sauce, black pepper, salt; transfer to a 4×9 to 5×9 loaf pan.
4) Bake until golden brown on top; about 45 minutes to 1 hour.

      Using calorie count the breakdown per serving is as follows:
      Calories: 90
      Fat: 2g
      Saturated Fat: 0g
      Total Carbohydrates: 20g
      Sugar: 8g (will vary depending on the brand of BBQ sauce)
      Protein: 6g
      Sodium will vary depending if you use dry lentils, canned, or low-sodium lentils. Hope that helps!
