The perfect recipe for anyone with an insatiable sweet tooth! These chocolatey truffles are made out of dates making for a high fiber dessert that does not skimp on flavor. Sweet, filling, and guilt free!
Yield: 6 to 8 truffles
Prep time: 2-3 hours (Soak the dates the night before to save on time)
Cook time: 10 minutes
12 dates, pitted and soaked in water for 2-3 hours (prunes can also be used in a pinch)
4 TBSP cacao powder
1 TBSP coconut oil
¼ tsp vanilla extract
½ tsp cinnamon
Pinch of salt
2 TBSP brown sugar
1) Add all ingredients except for the brown sugar to a food processor or blender and blend until a thick paste is formed.
2) Roll the date paste into tablespoon-sized balls. Coat each truffle in brown sugar and then place on a piece of wax paper. Refrigerate for 2-3 hours or until truffles are firm.
